Ora King is a New Zealand salmon with a delicious history. This week we travel to three cities to meet three chefs. The most creative Aura King Salmon is both a finalist in international competition for making dishes.
To start the assessment process, I visit Texas Austin, Texas to meet Mia Li of Lenoir Restaurant and learn cooking theory based on my personal and domestic experience.
From there, we get to Brooklyn. I find Yael Peet the chef in her difficult Japanese speakeasy (Karasu). Yael's mastery of her training as an accessible Japanese cooking and animation artist has made her Ora King cooking stand out.
Then, we are in third place in Los Angeles. Chef Jonathan Granada worked from the legendary French Laundry in the Napa Valley to commis to line chefs. He is currently working as a cook at Otium.
Once you know all three finalists, you will know the big winner. We also learn a little more about the fish of time, Ora King. David Smith tells the story of a fish taking us from the coast of California to the river in New Zealand.
